My first experience in Germany was small city about 45 minutes away from Maastricht called Aachen. We only did a day in this place and that is definitely all you need here. Overall it was an interesting little city, but probably somewhere I never need to go back to.
The cathedral in Aachen is definitely the highlight, its a massive one with a ton of history around it. It was cool, but once you get past that there is really not a lot to do in this city. We went during Carnival so there was a bunch of marching bands roaming around which was interesting to see at least. Aachen is also decently cheap, so if you ever wanted to shop it would be a pretty good place to go as well.
I would probably skip this city if you were travelling Europe, and I'm sure there are more interesting options to go in Germany.
