Lifou, the central island of New Caledonia, or as this archipelago is also called, the Society Islands.
Lifou has about 10,000 inhabitants and is mainly inhabited by the Kanak tribe. Traditional constructions, such as the assembly house built from coconut, alternate with modern buildings.
The national dish 'Bougna' is prepared in a traditional earth oven. It consists of meat or fish (here, a chicken), taro, yam, sweet potato, plantain, coconut milk, and salt. Wrapped in banana leaves, the whole package is cooked in the earth oven and tastes exquisite.
