And only on a second glance, as you are used to, #informative, because today we want to introduce you to a not very well-known specialty from the region: the #Hägenmark. For those of you who are new to it: #Rosehip puree.
The Mecca of #Rosehips can be found in a small village, hidden behind the gentle rises of the Alb, called #Auendorf. When you arrive in the tranquil Auendorf, there's no way to miss its trademark: the Hägenmark. Two large red rosehips even adorn the village coat of arms. Once widely spread throughout the village, today mainly three families are still engaged in the production of the traditional #spread. However, before the rosehips can be turned into puree, the residents of Auendorf must “work quite hard and not slack off.”
Auendorf, a rural community belonging to #BadDitzenbach, which until 1849 was known as Ganslosen, is regionally famous for its vitamin-rich “Hägenmark” jam made from rosehips, which has been produced here for over 150 years. Along the approximately two-kilometer long Hägenmark trail, rosehips and the production of the Hägenmark-#jam are presented on seven #thematic panels (e.g., biotope, #medicinal plant, #mythology, beginnings of #production and #manufacturing). Additionally, there is the possibility to visit the production company by appointment.

The various Auendorf rosehip manufacturers produce their #rosehip puree in the housewife style, the “Auendorfer way.” The rosehips are pressed by two rollers until they burst open, stored until they become “doughy,” and then passed in their raw state, first through a coarse sieve to remove the seeds and then through a fine sieve to remove the fruit hairs. After that, the raw rosehip puree (without preservatives) is heated while stirring constantly to a maximum of 75°C and filled into jars while still hot, sealed airtight. This way, the rosehip puree can be stored for at least a year in a cool place. The raw rosehip puree is also sold directly for home canning, but then it must be preserved with benzoic acid.
