Fuerteventura is famously known as 'strong wind'. That certainly has its justification, although we expected it to be much worse. We were in the south, specifically in Jandia Playa. Great beach, especially for the cold winter months, as all other destinations are much further than a 4-hour flight away.
There is no such thing as 'a lot of rain' in the Canary Islands in general. Out of about two weeks, we had 2 days where it was slightly cloudier, which is still okay for early November. Most days were a bit windy, but it was still very pleasant on the beach (felt like 25 degrees Celsius). In general, the Canary Islands are beautiful all year round (in our experience, even in the winter months like November, February or March).
For the adventurous travelers, there is plenty to discover on the island. It's best to rent a car and explore the volcanic-like landscape yourself. There is no 'most beautiful spot' because Fuerteventura, like every island in the Canary Islands, has its own charm.
There are numerous spots in Fuerteventura, we were in Jandia (which was perfectly fine for us beginners). There is a surf school right on the beach of Jandia Playa and even though we fell into the water several times (thankfully it's not as bad as falling on the snow while snowboarding ;-)), it was a lot of fun and we definitely discovered a passion for (especially wind) surfing!
