Just before closing time at 9:00 p.m., we were lucky enough to make it to Rib Co, where we encountered a very friendly server. Sitting outside, we had the main road next to us, but at that time there were hardly any cars driving by.
Steffi ordered a half rack of baby back ribs glazed with pineapple BBQ sauce, served with slaw and beans. I decided to have the same ribs, along with a half rack of baby back ribs with house rub, served dry, along with mac 'n cheese and slaw. They used mesquite for smoking. You could watch the employee at the grill while he worked. We were both very impressed with the ribs, especially the house rub was really tasty. The slaw and mac 'n cheese were also delicious. The only thing that was just okay was Steffi's beans, which were swimming in sauce and didn't have any other ingredients.
When I asked, I was told that they don't sell the house rub. Luckily, they made an exception for me. The pitmaster even came to our table and answered my remaining questions. The rub contains a 7-pepper blend, garlic powder, and dried onions; the rest he keeps to himself. When I asked about the preparation of the delicious ribs, he explained that it takes place at 80 degrees for 12 hours. Whether they were smoked the whole time or boiled, I didn't quite understand.
