Lefse - a Norwegian specialty

After Ole Bjarne showed me a typical Norwegian specialty, lefse, yesterday, I wanted to bake it myself since I couldn't find it in any supermarket.

However, it wasn't that easy, but here's the result:


A lefse is a kind of pancake or flatbread with cinnamon butter, which is available around Christmas time. In the evening, our coordinator came by and I wanted a real Norwegian to taste my lefse. She said it was very tasty, but not related to the lefse she knows. In general, lefse is like dialects - every village has its own variation. In this region, there is the so-called Sunnfjord lefse.


And here's the recipe I put together from a few online recipes:

Ingredients for about 10 lefse:

- 250 ml milk

- 125 g butter

- 125 g sour cream

- 400 g flour

1. Boil butter and milk together, then mix in the sour cream and flour

2. Chill for a while

3. Divide the dough into 10 equal portions

4. Roll out the dough into very flat breads and put them in the pan (no oil or butter!)

5. Wait until the dough gets brown/black spots, then flip

6. Spread cinnamon butter (butter mixed with sugar and a little cinnamon) on them while they are still warm and roll them up

7. Let cool and enjoy!
