Seabass with baby spinach salad, beans, and pickled fennel
Finally arrived in the Nelson wine region. :-) In perfect weather, 26 degrees, sunshine, we went to the wine tastings (more on that later). If the winery also has a restaurant, that's perfect.
This was the case with Waime Waime Estates. The tasting could also take place in the restaurant along with the food. Very charming, because this way you could immediately test whether the wine is the perfect companion for the meal or not.
I chose the sea bass with baby spinach salad, beans, and pickled fennel. Very delicious. The fennel was amazing!
Since I like such things, I immediately asked the cook how he pickled the fennel. He was so happy that I came into his open kitchen that he immediately wrote down the recipe for me. I love the Kiwis :-)
