Sado - plant sweet potatoes and udon noodles

The next lecture by Connor is about climate change. Unfortunately, I don't learn anything new this time, as we constantly hear about this topic and I think everyone knows that it looks pretty bad at the moment. To lighten the mood afterwards, we will make our own Udon noodles. The dough consists of only flour, water, and salt and is kneaded for a long time, so that a lot of gluten forms and the dough becomes nicely stretchy. To make it easier to knead, we put it in a bag and flatten it with our feet. Once it is flat enough, we fold it and knead it again. This is repeated a few times and then it has to rest for a while. To pass the time, we will visit a village in the afternoon where there are many abandoned rice fields. There simply aren't enough people here anymore to take care of all the fields. But to prevent them from standing completely empty, other vegetables are partially planted on them. We will plant sweet potatoes in the prepared beds together with a few elementary school children. We distribute the seedlings to the children, who then plant them. Unfortunately, not all fields can be planted with vegetables, so we sprinkle the remaining ones with flower seeds so that they at least look pretty in the summer. After the children have returned by bus, we chat with the mayor of the village for a while. He tells the story that there was almost a time when rice could no longer be grown in the Ogi area. The reason was that no fresh water could be found to fill the rice fields. In his dramatic storytelling, on the very last day they finally found water. They had dug a horizontal hole and discovered a water reservoir trapped in volcanic rock. Even though none of us understands directly what he is saying, his enthusiasm in his voice keeps us from getting bored. On the way back, we of course make the usual stop at the Tayaki shop and this time I finally try the Anko with walnut version. *~*
